Cilantro Lime Rice
I won’t bore you with my novel long story on how I had an eye-opening experience that brought me to this recipe. Here it is! Cilantro Lime Rice! Pairs with almost any entrée perfectly! Enjoy!
Ingredients:

1 C White Rice

2 C Water
-
1 Tb Butter (optional)

½ Bundle of Cilantro, minced
-
1 Lime
-
Salt to taste

Instructions:
1. Bring your water to a boil in a medium pot. Add a pinch of salt and butter. Allow the butter to melt.
2. Stir in the rice as the water is boiling. Turn the heat down to low to keep a light simmer. Cover your pot and let this cook for about 17 minutes. Here is my favorite timer!
3. Check to see if your rice is tender and the liquid is absorbed. You may need to cover it again and let it continue to cook. This may take up to ~25 minutes to fully cook.
4. When the rice is done cooking, turn off the heat and let it set for another few minutes to let it finish absorbing any remaining liquid.
5. Take off the lid, fluff up the rice with a fork and let it sit for another 2 minutes.
6. Mix in your cilantro and squeeze lime juice in the rice. You may need to add more salt to taste.
Tips:
– Wash your cilantro the night before so it is dry by the time you chop it. Dry cilantro is much easier to cut than wet!
-Can subsitute with brown rice if preferred. Be aware that your water to rice ratio and cooking time will be different!
-Use this rice for your taco salad! Super yummy!
