Homemade Salsa
I won’t bore you with my novel long story on how I had an eye-opening experience that brought me to this recipe. Here it is! Homemade Salsa! Super easy, cook your veggies and blend! Enjoy!
Ingredients:

5-8 Roma Tomatoes

¼ White Onion
-
1-2 Jalapeños
-
3 Garlic Cloves
-
1 Bundle Cilantro
-
3-4 Limes
-
Salt
-
Garlic Powder
-
Instructions:
1. Wash your veggies. Remove the stems from the tomatoes and jalapeños. Peel your garlic, cut your limes in half and cut the onion in half, then half again to get ¼ piece.
2. Place the tomatoes, onion, jalapeños, and garlic in a medium sized pot and fill with water about half way.
3. Bring to a boil and let it boil for about 10 minutes. We know it’s ready when you can see that the tomato skin is peeling away!
4. Place the onion, jalapeños, garlic and tomatoes in the blender. (I usually will use a pair of tongs to peel the tomatoes before I put them in the blender… be careful, they’ll be hot!)
5. Blend these until you reach a smooth consistency.
6. Add the cilantro, a teaspoon of salt and a pinch of garlic powder and blend again.
7. Squeeze the lime juice into the mixture and blend for a quick second to mix this in.
8. Taste test! Using a tortilla chip, let’s test this out! Adjust the seasonings or add more lime juice if needed.
Tips:
-This is a great recipe to use those veggies that are on their last leg! I’ll often make this quick salsa when my tomatoes are too ripe to eat.
-Wash your cilantro the night before so it is dry by the time you blend it. Dry cilantro is MUCH easier to cut than wet!
-If you don’t like your salsa spicy, you can use just 1 jalapeño or take the seeds out!
-Don’t be afraid to use salt and lime! The more, the better in my opinion!
-Pair this salsa with your taco salad!
