Overnight Crockpot Frijoles
I won’t bore you with my novel long story on how I met the old wise nana in the caves of Mexico to find this recipe. Here it is! Overnight Crockpot Frijoles! Enjoy! Super easy, throw it in the pot and wake up to some super yummy frijoles!
Ingredients:

1 lb Pinto Beans
-
½ White Onion
-
2-3 Garlic Cloves, whole

1 Jalapeño, whole
-
Salt
-
Pepper
-
Cummin
-
Chili Flakes
-
1 Cube of Tomato Bouillon
-
1½ C Chicken Stock
-
Water
-
Instructions:
1. Clean your beans! Sort through and discard any broken beans and the occasional pebble! (Great activity for the kids to help with!) Rinse the beans thoroughly.
2. Throw it all in your trusty slow cooker! I typically eyeball my spices when I cook, so you can really adjust this recipe to your family’s liking!
3. Cook on ‘low’ heat setting for about 7-9 hours.
4. Wake up to a delicious pot of beans!
Tips:
-Fill your crockpot 3/4 full of water
-The jalapeño will not add spice to your beans unless you cut it open! It’s all for the flavor!
-Top off your bowl of frijoles with some shredded Mexican cheese! YUM!
-Pair this with a taco salad!
