Pico De Gallo
I won’t bore you with my novel long story on how I had an eye-opening experience that brought me to this recipe. Here it is! Pico De Gallo Salsa! Super easy, chop up your veggies and mix it in a bowl! Enjoy!
Ingredients:

10 Roma Tomatoes, diced
-
½ Red Onion, diced
-
1-2 Jalapeños, diced (optional)
-
1 Bundle Cilantro, minced
-
3-4 Limes
-
Salt
-
Instructions:
1. Chop up your veggies!
-Small dice the tomatoes, red onion and jalapeños.
-Mince the cilantro!
-I love to use this veggie chopper to quickly dice up my produce!
2. Mix it all in a bowl, squeeze lime juice and season with salt. I usually will taste test it with some tortilla chips and adjust my seasonings (lime juice and salt) until I get the perfect taste!
Tips:
-Wash your cilantro the night before so it is dry by the time you chop it. Dry cilantro is MUCH easier to cut than wet!
-If you don’t like your pico spicy, you can opt out of the jalapeños or take the seeds out!
-I don’t like my pico to be super liquidy so I usually will place my chopped tomatoes in a strainer above my bowl. If I’m making beans that same day, I’ll throw that tomato juice in with the beans!
-Don’t be afraid to use salt and lime! I love eating tomatoes with salt and pepper. The more salt on tomatoes, the yummier in my opinion!
-This pairs great with a Taco Salad!
